Raspberries
Raspberries are bright, floral and gently tart. They pair beautifully with:
- 60–65% dark chocolate the sweet spot. Enough bitterness to complement the raspberry's acidity without overpowering its delicate floral notes. This is our go-to recommendation for a crowd-pleasing pairing.
- 70% dark chocolate for those who prefer a more intense experience. The deeper cocoa notes bring out the jammy undertones in ripe raspberries particularly well.
Avoid anything above 75% with raspberries as the bitterness can clash rather than complement.
Blackberries
Blackberries are earthier and more robust than raspberries, with a deeper berry flavour and a pleasant astringency. They can hold their own against bolder chocolate:

3-Step Chilled Chocolate Dipping Sauce
This recipe is light, silky and takes minutes to prepare. Serve it alongside a bowl of fresh raspberries and blackberries for an effortless summer dessert or set it out at a garden gathering and watch it disappear.
You'll need:
- 100g quality dark Belgian chocolate (65–70%), finely chopped
- 100ml double cream
- 1 tsp runny honey
- A pinch of flaky sea salt
- Fresh raspberries and blackberries to serve
Step 1 — Melt gently. Place the chopped chocolate in a heatproof bowl. Heat the cream in a small saucepan over a low heat until it just begins to steam but do not boil. Pour the warm cream over the chocolate and leave for 60 seconds, then stir slowly from the centre outward until completely smooth and glossy.
Step 2 — Season and sweeten. Stir in the honey and a pinch of sea salt. Taste and add a little more honey if you'd like it sweeter, a touch more salt to deepen the chocolate flavour. The sauce should be rich but not cloying.
Step 3 — Chill and serve. Transfer the sauce to a small serving bowl and refrigerate for 20–30 minutes until it thickens to a soft, spoonable consistency.
